Omelette and Mornay Sauce

Prepare the Mornay Sauce
In a saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of flour and whisk continuously for about 2 minutes until it turns golden. Gradually whisk in 1 cup of milk and cook until it thickens. Add the grated smoked gouda cheese, salt, and black pepper, stirring until the cheese is melted and smooth. Set aside.
Cook the Onions and Tomatoes
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10 minutes. Add the halved cherry tomatoes and cook until just softened, about 5 minutes. Set aside.
Cook the Omelette
In a bowl, whisk together the eggs and a pinch of salt. In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture, swirling to coat the pan evenly. Cook until the edges set, about 3 minutes.
Assemble the Omelette
Once the omelette is cooked, add the crumbled sausage, chopped bacon, caramelized onions, and roasted tomatoes on one half. Fold the omelette over and cook for another minute.
Serve
Plate the omelette and drizzle the smoked gouda mornay sauce over the top. Serve with a side of home fries.
