Dice the potatoes and soak them in water for 10 minutes. Drain and pat dry.

In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the potatoes, season with salt and black pepper, and cook until golden brown and crispy, about 15-20 minutes. Stir occasionally.

In another skillet, heat the remaining olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10 minutes. Add the mushrooms and spinach, cooking until softened, about 5 minutes. Season with salt and pepper.

Preheat the oven to 400°F (200°C). Halve the tomatoes, place them on a baking sheet, drizzle with olive oil, and season with salt. Roast for 20 minutes.

Prepare the Poblano-Tomato Sauce

Blend the roasted tomatoes with the poblano pepper until smooth. Adjust seasoning if needed.

In a bowl, layer the crispy potatoes, sautéed vegetables, roasted tomatoes, and crumbled goat cheese. Top with optional eggs cooked to your liking and sliced avocado.
