Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle both sides lightly with salt and let them sit for about 10 minutes to draw out moisture.
Set Up Breading Station
In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and buttermilk. In a third bowl, combine the cornmeal, salt, black pepper, and cayenne pepper.
Bread the Tomatoes
Dredge each tomato slice in flour, then dip it into the egg and buttermilk mixture, and finally coat it with the cornmeal mixture. Make sure each slice is well coated.
Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium heat. Once the oil is hot, carefully add the breaded tomato slices in batches, frying until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
