    Caramelize the Onions

    Thinly slice the large onion and heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions, a pinch of salt, and cook, stirring occasionally, until the onions are golden brown and caramelized, about 15-20 minutes.

    Prepare the Poblano-Tomato Sauce

    Roast the poblano peppers over an open flame or in the oven until the skin is charred. Peel the skin off, remove seeds, and chop. In a blender, combine chopped poblano, diced tomatoes, 1 tablespoon of olive oil, salt, and black pepper. Blend until smooth.

    Assemble the Sandwich

    On a slice of wheatberry bread, layer smoked brisket, caramelized onions, fresh spinach, spicy belly pickles, and cheddar cheese. Top with another slice of bread.

    Cook the Sandwich

    Heat a skillet over medium heat with a little olive oil. Grill the sandwich until the bread is golden brown and the cheese melts, about 3-4 minutes per side.
