Ingredients: 6 cups Fresh ripe tomatoes; 1 cup Onion, chopped; 4 cloves Garlic cloves, minced; 2 cups Vegetable broth; 1 cup Heavy cream; 1 cup Fresh basil leaves, chopped; 2 tablespoons Olive oil; 1 teaspoon Salt; 1 teaspoon Black pepper

Chop the onions, mince the garlic, and roughly chop the tomatoes and basil.

Prepare the Ingredients

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for another minute.

Sauté the Vegetables

Add the chopped tomatoes to the pot and stir well. Cook for about 10-15 minutes until the tomatoes are soft and juicy.

Cook the Tomatoes

Pour in the vegetable broth, add salt and pepper, and bring the mixture to a boil. Reduce heat and let it simmer for 20 minutes.

Use an immersion blender to purée the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.

Stir in the heavy cream and chopped basil. Heat the soup gently over low heat for another 5 minutes.

Ladle the soup into bowls and garnish with house-made croutons and additional basil if desired.
