Cook the Spaghetti
Bring a large pot of salted water to a boil, and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté the Shrimp
In a large skillet, heat olive oil over medium heat. Add the shrimp, season with salt and black pepper, and sauté for about 2-3 minutes until they turn pink and opaque. Remove shrimp from the skillet and set aside.

Prepare the Sauce
In the same skillet, add the capers and hot pepper flakes, cooking for about 30 seconds. Then, add the diced tomatoes and heavy cream. Stir to combine and let it simmer for about 5 minutes until the sauce thickens slightly.

Combine Everything
Return the shrimp to the skillet with the sauce. Add the cooked spaghetti and toss everything together, adding reserved pasta water as needed to reach the desired consistency.

Serve
Plate the pasta, and top with shaved cheese blend and chopped scallions. Enjoy your Shrimp Rossini!
