Preheat the Oven
Preheat your oven to 375°F (190°C).

Cook the Tortellini
In a large pot of boiling salted water, cook the tri-color cheese tortellini according to package instructions until al dente. Drain and set aside.

Sauté the Garlic and Tomatoes
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.

Combine Ingredients
In a large mixing bowl, combine the cooked tortellini, shredded roasted chicken, sautéed tomatoes and garlic, heavy cream, ricotta cheese, chopped basil, salt, and black pepper. Mix well until everything is evenly combined.

Assemble the Gratinati
Transfer the mixture to a greased baking dish. Sprinkle the shredded mozzarella and grated Pecorino Romano cheese on top.

Bake
Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

Serve
Remove from the oven and let it sit for a few minutes before serving. Garnish with additional fresh basil if desired.
