Ingredients: 12 oz Tri-color cheese tortellini; 2 cups Roasted chicken, shredded; 1.5 cups Cherry tomatoes, halved; 1 cup Heavy cream; 1 cup Ricotta cheese; 1.5 cups Mozzarella cheese, shredded; 0.5 cup Pecorino Romano cheese, grated; 2 tbs Olive oil; 3 cloves Garlic, minced; 0.25 cup Fresh basil, chopped; 1 tsp Salt; 0.5 tsp Black pepper

Tri-color cheese tortellini, roasted chicken, tomatoes, cream, ricotta, mozzarella & Pecorino Romano

Preheat the Oven

In a large pot of boiling salted water, cook the tri-color cheese tortellini according to package instructions until al dente. Drain and set aside.

Cook the Tortellini

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and cook for another 3-4 minutes until they start to soften.

Sauté the Garlic and Tomatoes

In a large mixing bowl, combine the cooked tortellini, shredded roasted chicken, sautéed tomatoes and garlic, heavy cream, ricotta cheese, chopped basil, salt, and black pepper. Mix well until everything is evenly combined.

Combine Ingredients

Transfer the mixture to a greased baking dish. Sprinkle the shredded mozzarella and grated Pecorino Romano cheese on top.

Assemble the Gratinati

Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

Remove from the oven and let it sit for a few minutes before serving. Garnish with additional fresh basil if desired.
