Preparation
- 1
Make the Pizza Dough
In a bowl, combine warm water, sugar, and yeast. Let it sit until foamy, about 5-10 minutes. In a large bowl, mix flour and salt. Make a well in the center, add the yeast mixture and olive oil. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for about 1 hour or until doubled in size.

- 3
Cook the Sausage
In the same skillet, cook the breakfast sausage over medium heat until browned and cooked through. Drain excess fat and set aside.
- 4
Preheat the Oven
Preheat your oven to 475°F (245°C).
- 5
Assemble the Pizza
Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza stone or baking sheet. Spread the caramelized onions evenly over the dough, followed by the cooked sausage. Sprinkle fontina and pecorino cheese on top.
- 6
Add the Eggs
Create small wells in the toppings and crack the eggs into these wells. Season with salt and black pepper.
- 7
Bake the Pizza
Bake in the preheated oven for about 12-15 minutes or until the crust is golden and the eggs are set to your liking.
- 8
Serve
Remove from the oven, let cool for a few minutes, slice, and serve warm.
