Chicken Milanese Preparation

1. Prepare the Chicken

Pound the chicken breasts to an even thickness. Season with salt and pepper.

2. Breading the Chicken

Dredge the chicken in flour, dip into beaten eggs, and coat with breadcrumbs.

3. Frying the Chicken

Heat olive oil in a skillet over medium-high heat. Fry the chicken until golden brown, about 4-5 minutes per side. Drain on paper towels.

4. Assembling the Dish

Top the fried chicken with sliced Roma tomatoes and serve on the focaccia with arugula drizzled with lemon juice.
