Cooking the Rice

Rinse the Rice

Rinse the short-grain rice under cold water until the water runs clear to remove excess starch.

Cook the Rice

In a saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice has absorbed the water and is tender.

Preparing the Pudding

Combine Ingredients

In the same saucepan with the cooked rice, add 4 cups of milk, 3 tablespoons of sugar, a pinch of salt, and 1 teaspoon of vanilla extract.

Cook the Mixture

Cook over medium heat, stirring frequently to prevent sticking, until the mixture thickens and reaches a creamy consistency, about 20-25 minutes.

Chill the Pudding

Once thickened, remove the saucepan from heat and let the pudding cool slightly. Then, pour the mixture into individual serving bowls or ramekins and let them cool to room temperature before refrigerating for at least 2 hours.

Serving

Garnish and Serve

Before serving, sprinkle ground cinnamon on top of the pudding and add chopped pistachios if desired. Serve chilled.
