Ingredients: 4 pieces boneless chicken leg quarters; 4 tbs olive oil; 3 tbs lemon juice; 4 cloves garlic cloves, minced; 2 tsp paprika; 1 tsp dried oregano; 1 tsp salt; 1 tsp black pepper; 1 cup long-grain rice; 2 cups water; 1 tsp salt; 1 medium cucumber, diced; 1 medium tomato, diced; 1 small red onion, thinly sliced; 1 tbs lemon juice; 1 tbs olive oil; to taste salt; to taste black pepper

Marinated boneless chicken leg quarters grilled to tenderness. Served with rice and salad.

In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, dried oregano, salt, and black pepper. Mix well.

Marinate the Chicken

Add the boneless chicken leg quarters to the marinade. Make sure each piece is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight.
