Cooking Instructions
Prepare the Ingredients
Thinly slice the pork belly, onion, and cabbage. Chop the kimchi into smaller pieces. Mince the garlic.
Cook the Udon Noodles
Boil the udon noodles according to package instructions. Drain and set aside.
Make the Sauce
In a small bowl, mix together soy sauce, gochujang, sesame oil, minced garlic, and sugar. Set aside.
Stir-Fry the Pork Belly
In a large pan or wok, heat a bit of oil over medium heat. Add the pork belly and stir-fry until browned and cooked through.
Add Vegetables
Add the onion and cabbage to the pan with the pork belly. Stir-fry until the vegetables are tender.
Combine Noodles and Sauce
Add the cooked udon noodles and kimchi to the pan. Pour the sauce over the mixture and toss everything together to combine well.
Serve
Plate the stir-fried udon and top with the sunny-side up eggs. Serve hot.
