stir fry udon noodles- kimchi, onion, cabbage, pork belly & a sunny egg in a spicy savory sauce

Thinly slice the pork belly, onion, and cabbage. Chop the kimchi into smaller pieces. Mince the garlic.

Prepare the Ingredients

Boil the udon noodles according to package instructions. Drain and set aside.

Cook the Udon Noodles

In a small bowl, mix together soy sauce, gochujang, sesame oil, minced garlic, and sugar. Set aside.

In a large pan or wok, heat a bit of oil over medium heat. Add the pork belly and stir-fry until browned and cooked through.

Add the onion and cabbage to the pan with the pork belly. Stir-fry until the vegetables are tender.

Add the cooked udon noodles and kimchi to the pan. Pour the sauce over the mixture and toss everything together to combine well.

In a separate pan, fry the eggs sunny-side up until the whites are set but the yolks are still runny.

Plate the stir-fried udon and top with the sunny-side up eggs. Serve hot.
