Instructions for Making Japchae

    Prepare the Noodles

    Soak the sweet potato glass noodles in warm water for about 30 minutes until softened. Drain and set aside.

    Prepare the Vegetables

    Julienne the carrots, slice the onion, and chop the shiitake mushrooms. Rinse the spinach and chop the scallions.

    Cook the Vegetables

    In a large pan or wok, heat 1 tablespoon of toasted sesame oil over medium heat. Add the onion and sauté until translucent. Add the carrots and shiitake mushrooms, cooking for 3-4 minutes. Add the spinach and scallions, cooking until the spinach is wilted.

    Combine Noodles and Seasoning

    Add the soaked glass noodles to the pan with the vegetables. In a small bowl, mix the soy sauce, sugar, minced garlic, and black pepper. Pour this mixture over the noodles and stir-fry for an additional 5-7 minutes, ensuring everything is well combined.

    Finish the Dish

    Drizzle the remaining toasted sesame oil over the japchae and sprinkle with sesame seeds before serving.
