Prepare the Vegetables
Chop the zucchini, onion, and cabbage into thin strips.
Cook the Noodles
Boil water in a pot, add a pinch of salt, and cook the wheat noodles according to the package instructions. Drain and set aside.
Make the Sauce
In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant.
Add Black Bean Paste
Stir in the black bean paste, soy sauce, and sugar. Mix well to combine with the vegetables.
Add Water
Pour in the water and bring the mixture to a simmer. Let it cook for about 5 minutes until the sauce thickens slightly.
Combine Noodles and Sauce
Add the cooked noodles to the skillet and toss them in the sauce until they are well coated. Season with salt and pepper to taste.
Serve
Serve the Jajangmyeon hot, garnished with additional chopped vegetables if desired.
