In a medium bowl, combine soy sauce, brown sugar, minced garlic, sesame oil, and black pepper. Grate the Korean pear and add it to the mixture. Stir well until the sugar is dissolved.

Thinly slice the top sirloin and ribeye beef against the grain. Place the sliced beef in a large bowl or zip-lock bag and pour the marinade over the beef. Ensure all pieces are well coated. Refrigerate for at least 30 minutes or up to 2 hours for deeper flavor.
