Noodles and Vegetables

Preparation

    Cook the Noodles

    Bring a large pot of water to a boil. Add the wheat flour noodles and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables

    While the noodles are cooking, prepare the vegetables. Julienne the Korean radish, red bell pepper, and Korean pear. Chop the scallions and perilla leaves. Set all the vegetables aside.

    Blanch the Bean Sprouts

    Bring a small pot of water to a boil. Add the bean sprouts and blanch for about 2 minutes until tender. Drain and rinse under cold water. Set aside.

    Make the Sauce

    In a small bowl, combine gochujang, soy sauce, sesame oil, sugar, vinegar, and minced garlic. Mix well until smooth.

    Combine Everything

    In a large mixing bowl, combine the cooled noodles, prepared vegetables, and the sauce. Toss well to coat all the ingredients evenly.

    Prepare the Eggs

    In a small frying pan, fry the eggs sunny-side up or scrambled, as preferred. Place the cooked eggs on top of the noodle mixture.

    Serve

    Serve the bibim guksu in individual bowls, garnished with additional scallions or perilla leaves if desired.
