    Prepare the Piloncillo Glaze

    In a small saucepan over medium heat, combine piloncillo and butter, stirring until melted and slightly thickened. Set aside.

    Roast the Butternut Squash

    Preheat the oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Spread in a single layer on a baking sheet and roast for 25-30 minutes or until tender and caramelized.

    Cook the Rice

    In a medium saucepan, bring vegetable broth to a boil. Add rice and mixed vegetables, reduce heat to low, cover, and simmer for 15-20 minutes (or according to rice package instructions) until rice is cooked and liquid is absorbed. Fluff with a fork and stir in fresh herbs.

    Grill the Salmon

    Preheat the grill to medium-high heat. Season salmon fillets with salt and black pepper. Place on the grill skin-side down. Brush with piloncillo glaze. Grill for about 5-7 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Plate the grilled salmon alongside roasted butternut squash and vegetable-studded rice. Drizzle any remaining piloncillo glaze over the salmon for extra flavor.
