Prepare the Short Ribs

In a large pot, heat olive oil over medium-high heat. Season the short ribs with salt and sear them until browned on all sides. Remove the ribs and set aside.

Cook the Aromatics

In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent.

Add Flavorings

Stir in the chipotle peppers, diced tomatoes, beef broth, cumin, and return the short ribs to the pot. Bring to a simmer.

Braised Short Ribs

Cover and cook on low heat for about 2-3 hours, or until the short ribs are tender and the meat easily pulls away from the bone.

Prepare the Kale Slaw

In a bowl, mix shredded kale with lime juice, salt, and let it marinate for about 10 minutes.

Heat the Tortillas

In a separate skillet, warm the flour tortillas until they are crispy on the edges.

Assemble the Chalupa

Spread a layer of refried black beans on each crispy tortilla. Top with shredded short rib tinga, kale slaw, guacamole, queso cotija, pickled jalapeños, and pickled onions.
