In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat.

Stir in salt, pepper, cumin, and chili powder. Cook for an additional 5 minutes until well combined and heated through.

Make the Smoked Tomato Pico
Dice the smoked tomatoes and combine them in a bowl. Season with salt and pepper to taste.

Assemble the Tacos
In each crispy corn shell, add a portion of seasoned ground beef, followed by smoked tomato pico, kale slaw, jalapenos, pickled onions, and a drizzle of Mexican crema. Top with queso cotija.
