    Prepare the Beef Short Ribs

    Season the beef short ribs with salt and black pepper. In a large pot, heat olive oil over medium-high heat and sear the short ribs on all sides until browned. Remove and set aside.

    Sauté Aromatics

    In the same pot, add chopped onion and minced garlic. Sauté until the onion is translucent.

    Braised the Ribs

    Return the short ribs to the pot, add beef broth, and bring to a simmer. Cover and reduce heat to low. Cook for 2-3 hours until the meat is tender and falling off the bone.

    Shred the Meat

    Remove short ribs from the pot, let cool slightly, then shred the meat, discarding bones and excess fat.

    Prepare the Enchiladas

    Preheat the oven to 350°F (175°C). Fill each tortilla with shredded beef, roll tightly, and place seam side down in a baking dish.

    Toast Pasilla Sauce

    In a blender, blend toasted pasilla peppers with a bit of the braising liquid until smooth. Pour sauce over the enchiladas.

    Bake

    Sprinkle cotija cheese and pepitas over the enchiladas. Bake in the oven for 20-25 minutes until heated through.

    Serve

    Top with pickled onions and serve hot.
