    Prepare Aromatics

    Chop the lemongrass stalks, tear the kaffir lime leaves, and slice the galangal and bird's eye chili peppers.

    Prepare Vegetables

    Slice the mushrooms and quarter the tomatoes. Set aside.

    Prepare Shrimp

    Ensure shrimp is peeled and deveined. Rinse and set aside.

Cooking

    Simmer the Broth

    In a large pot, bring the chicken or vegetable broth to a boil over medium-high heat.

    Add Aromatics

    Add the chopped lemongrass, torn kaffir lime leaves, sliced galangal, and sliced bird's eye chili peppers to the boiling broth. Reduce heat to medium and let simmer for 10 minutes.

    Add Mushrooms and Tomatoes

    After 10 minutes, add the sliced mushrooms and quartered tomatoes to the pot. Allow to simmer for an additional 5 minutes.

    Cook the Shrimp

    Add the peeled and deveined shrimp to the pot. Cook for about 3-5 minutes or until the shrimp turn pink and are cooked through.

    Season the Soup

    Stir in the fish sauce, sugar, and lime juice. Adjust seasoning to taste.

Serving

    Garnish and Serve

    Ladle the soup into bowls and garnish with chopped cilantro. Serve hot.
