Preparation

Soak the Rice Noodles
Place the rice noodles in a large bowl and cover them with hot water. Let them soak for about 30 minutes until they are soft. Drain and set aside.

Prepare the Sauce
In a small bowl, mix together fish sauce, tamarind paste, brown sugar, and Sriracha sauce. Stir until the sugar is dissolved and set aside.
Cooking

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook until they turn pink, about 2-3 minutes. Remove the shrimp from the skillet and set aside.

Sauté Garlic
In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant.

Add Noodles and Sauce
Add the drained rice noodles to the skillet and pour the prepared sauce over them. Toss to combine and cook for about 2-3 minutes.

Finish with Shrimp and Vegetables
Add the cooked shrimp, chopped green onions, and bean sprouts to the skillet. Toss everything together and cook for another 1-2 minutes until heated through.
Serving

Garnish and Serve
Serve the Pad Thai hot, garnished with crushed peanuts, fresh cilantro, and lime wedges on the side.
