    Soak the Noodles

    Place the rice noodles in a bowl and cover them with hot water. Let them soak for about 20-30 minutes until they are soft, then drain and set aside.

Cooking

    Make the Sauce

    In a small bowl, combine soy sauce, tamarind paste, sugar, and chili powder. Mix well and set aside.

    Scramble the Eggs

    In a large pan or wok over medium heat, add a little oil. Crack the eggs into the pan and scramble them until fully cooked, then push them to one side of the pan.

    Stir-Fry Noodles

    Add the soaked noodles to the pan with the eggs. Pour the sauce over the noodles and mix everything well, cooking for about 3-4 minutes until heated through.

    Add Vegetables

    Stir in the bean sprouts and green onions, cooking for an additional 2-3 minutes until the vegetables are tender but still crisp.

Serving

    Plate the Pad Thai

    Serve the Pad Thai hot, garnished with crushed peanuts and lemon wedges on the side. Squeeze lemon juice over the dish to taste before eating.
