    Make the Dough

    In a large bowl, combine flour, sugar, cocoa powder, and salt. In a separate bowl, whisk together egg yolk, wine or vinegar, and melted butter. Gradually add the wet mixture to the dry ingredients and knead until a smooth dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Roll and Cut

    After chilling, roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a round cutter (about 3-4 inches in diameter).

    Form the Shells

    Wrap each circle around a cannoli mold, sealing the edges with a bit of water. Make sure the dough is tight around the mold.

    Fry the Shells

    Heat oil in a deep pan over medium heat. Once hot, carefully place the wrapped molds in the oil. Fry until golden brown, about 2-3 minutes. Remove the shells and allow to cool slightly before gently removing from the molds.
