Preparation
Cook the Pasta
In a large pot of salted boiling water, cook the pasta shells according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden. Slowly add the milk, whisking constantly until the mixture thickens. Stir in the cheddar cheese until melted and smooth. Season with salt and black pepper to taste.
Prepare Chili
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add kidney beans, tomato sauce, and chili powder. Stir and let simmer for about 10 minutes. Season with salt and pepper to taste.
Grill the Hotlink
While the chili simmers, grill the Schwabs hotlink according to package instructions, then slice into bite-sized pieces.
Assemble the Dish
In a large serving dish, combine the cooked pasta shells, cheese sauce, chili mixture, and grilled hotlink slices. Toss gently to combine. Top with parmesan cheese.
