1. Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and black pepper. In a bowl, beat the eggs and set aside. In another bowl, mix breadcrumbs and grated Parmesan cheese.
2. Bread the Chicken
Dip each chicken breast in the beaten eggs, then coat in the breadcrumb mixture, pressing gently to adhere.
3. Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for 4-5 minutes on each side until golden brown. Transfer to a baking dish.
4. Add Sauce and Cheese
Pour marinara sauce over the chicken and top with shredded mozzarella cheese.
5. Bake the Chicken
Bake in the preheated oven for 20-25 minutes, until the chicken is cooked through (internal temperature of 165°F/75°C) and the cheese is melted and bubbly.
6. Cook Spaghetti
While the chicken is baking, cook spaghetti according to package instructions. Drain and set aside.
7. Serve
Serve the chicken Parmesan over a bed of spaghetti, garnished with additional Parmesan cheese if desired.
