Cook the Veggies

In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Prepare the Impossible Bolognese

Add the Impossible Burger to the skillet. Cook until browned, breaking it apart with a spatula. Stir in the marinara sauce, salt, pepper, and red pepper flakes. Let it simmer for about 10 minutes, allowing the flavors to meld.

Assemble the Sandwich

On a slice of whole wheat bread, place a slice of vegan cheese, followed by a generous scoop of the Impossible bolognese mixture. Top with another slice of vegan cheese and another slice of bread.

Grill the Sandwich

Heat a pan over medium heat. Grill the sandwich until golden brown on each side and the vegan cheese has melted, about 3-4 minutes per side.

Remove from heat, sprinkle with house-made vegan parmesan, and serve warm.
