Cooking Instructions
Cook the Macaroni
In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Prepare the Chicken
While the macaroni is cooking, cut the chicken breasts into bite-sized pieces. Heat oil in a frying pan over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until golden brown and fully cooked, about 5-7 minutes. Remove from heat and toss with buffalo sauce. Set aside.
Make the Cheese Sauce
In the same pot used for the macaroni, melt butter over medium heat. Stir in flour and cook for about 1 minute. Gradually whisk in the milk, stirring constantly until the mixture thickens. Add cream cheese and cheddar cheese, stirring until melted and smooth. Season with salt and pepper.
Combine and Serve
Add the drained macaroni to the cheese sauce and stir until well combined. Transfer the mac and cheese to a serving dish, top with the buffalo chicken, and garnish with chopped green onions if desired. Serve hot.
