1. Prepare the Potatoes
Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and pierce them with a fork several times.
2. Bake the Potatoes
Place the potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes, or until they are tender when pierced with a fork.
3. Prepare the Filling
Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh into a bowl.
4. Mix the Filling
To the scooped potato flesh, add the butter, Mexican sour cream, Monterey Jack cheese, salt, and black pepper. Mix until well combined.
5. Stuff the Potatoes
Spoon the mixture back into the potato skins, mounding it on top. If desired, sprinkle chives on top.
6. Final Bake
Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
7. Serve
Remove from the oven, let cool for a few minutes, and serve warm.
