1. Prepare the dough
In a large mixing bowl, combine masa harina and salt. Gradually add water while mixing until a soft dough forms. Knead the dough for a few minutes until smooth.
2. Shape the gorditas
Divide the dough into equal portions (about 8 pieces) and roll each piece into a ball. Flatten each ball into a disk about 1/4 inch thick.
3. Cook the gorditas
Preheat a griddle or skillet over medium heat. Cook each disk for about 2-3 minutes on each side until lightly golden and cooked through.
4. Add fillings
Once cooked, carefully split each gordita open and fill with asientos and shredded Monterey Jack cheese. Allow the cheese to melt slightly.
5. Serve
Serve the grilled gorditas warm, optionally with salsa or additional toppings of your choice.
