Prepare the Filling
In a bowl, combine the shredded chicken, diced bell pepper, and half of the cheddar cheese. Season with salt and pepper to taste.
Assemble the Quesadillas
Place one flour tortilla on a clean surface. Spread the chicken and cheese mixture evenly over half of the tortilla. Sprinkle the remaining cheddar cheese on top. Fold the tortilla in half to cover the filling.
Cook the Quesadillas
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side or until golden brown and the cheese is melted. Repeat with the second quesadilla, adding more olive oil if necessary.
Serve
Remove the quesadillas from the skillet and let them cool slightly before cutting into wedges. Serve with sour cream and salsa on the side.
