    Prepare the Filling

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until softened, about 5 minutes. Add the fresh spinach and cook until wilted. Remove from heat and let cool slightly.

    Mix the Filling

    In a large bowl, combine the cooked spinach mixture with crumbled feta cheese, beaten egg, salt, black pepper, and dried dill. Mix well until combined.

    Prepare the Filo Dough

    Preheat your oven to 180°C (350°F). Lay out the filo dough on a clean surface. Cover with a damp cloth to prevent drying out. Brush a baking dish with olive oil.

    Assemble the Spanakopita

    Take one sheet of filo dough and brush with olive oil. Layer another sheet on top and brush again. Repeat for 4-5 sheets. Place a portion of the spinach-feta filling along one edge of the dough. Fold the sides over the filling and roll it up tightly. Place seam-side down in the prepared baking dish. Repeat with the remaining filo and filling.

    Bake

    Brush the tops of the spanakopita rolls with olive oil. Bake for 30-40 minutes, or until golden brown and crispy. Remove from the oven and let cool slightly before serving.
