Chicken and Marinade

Method

Preparation and Cooking

1

Marinate the Chicken

In a large bowl, combine olive oil, melted butter, lemon juice, white wine, minced garlic, oregano, salt, pepper, and paprika. Mix well. Add the chicken pieces, ensuring they are well coated with the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

2

Prepare the Potatoes

Preheat the oven to 200°C (400°F). While the chicken is marinating, wash and quarter the potatoes. In a separate bowl, toss the potatoes with olive oil, salt, and pepper to taste.

3

Bake the Chicken and Potatoes

Place the marinated chicken in a large baking dish. Arrange the quartered potatoes around the chicken. Pour any remaining marinade over the chicken and potatoes. Bake in the preheated oven for about 1 hour, or until the chicken is cooked through and the skin is golden brown, and the potatoes are tender.

4

Serve

Remove from the oven and let rest for 5-10 minutes. Serve the chicken and potatoes with a side of soup or salad, as per your choice.
