Prepare the Nut Filling

In a bowl, combine the walnuts, almonds, and cinnamon. Mix well and set aside.

Prepare the Syrup

In a saucepan, combine sugar, water, and honey. Bring to a boil and let it simmer for about 10 minutes. Remove from heat and stir in the vanilla extract. Set aside to cool.

Prepare the Kataifi

Preheat your oven to 350°F (175°C). Melt the butter and set aside. Take a handful of kataifi pastry and loosen it gently with your fingers.

Assemble the Kataifi

Spread a little melted butter on the baking dish. Place a portion of the kataifi on the dish, brush with melted butter, then add a spoonful of the nut mixture. Roll it up tightly and place it seam-side down in the baking dish. Repeat until all the ingredients are used.

Bake

Brush the tops of the rolls with more melted butter. Bake in the preheated oven for 30-35 minutes or until golden brown.

Add the Syrup

Once the kataifi is baked, remove it from the oven. Pour the cooled syrup evenly over the hot kataifi. Allow it to soak for at least 30 minutes before serving.
