    Activate the Yeast

    In a small bowl, combine the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Shape the Pitas

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball and then flatten into a disc about 1/4 inch thick.

    Second Rise

    Cover the discs with a cloth and let them rest for about 30 minutes.

    Preheat Oven

    Preheat your oven to 475°F (245°C). If using a baking stone, place it in the oven to heat.

    Bake the Pitas

    Place the discs on the baking stone or a baking sheet and bake for about 5-7 minutes, or until puffy and lightly browned.

    Remove from the oven and let the pita bread cool on a wire rack before serving.
