Prepare the Filling
In a saucepan, melt 1 cup of butter over medium heat. Add 1 cup of granulated sugar and flour, stirring until smooth. Gradually whisk in 4 cups of milk and cook until thickened. Remove from heat and let cool slightly. In a bowl, beat the eggs and vanilla extract, then stir into the mixture until well combined.

Prepare the Filo Dough
Preheat your oven to 375°F (190°C). Grease a large baking sheet. Unroll the filo dough and cover it with a damp cloth to keep it from drying out.

Assemble the Bougatsa Roll
Lay one sheet of filo dough on the baking sheet and brush it with melted butter. Repeat this process, layering and buttering each sheet, until you have about 6-8 layers. Spread a portion of the creamy filling along one edge of the dough. Carefully roll the dough over the filling, tucking in the sides as you go to create a log shape.

Serve
Allow the roll to cool slightly before slicing. Serve warm topped with whipped cream and a sprinkle of cinnamon.
