For the Ragu del Giorno
For the Baked Eggs
Method
Prepare the Ragu
- 1
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add chopped onion, carrot, and celery. Sauté until vegetables are softened, about 5 minutes.
- 2
Add Garlic and Meat
Stir in minced garlic and cook for 1 minute. Add ground beef and cook until browned, breaking it apart with a spoon.
- 3
Incorporate Tomatoes and Wine
Stir in crushed tomatoes, red wine, dried oregano, salt, and pepper. Bring to a simmer and let cook for 20 minutes, stirring occasionally.
- 4
Finish with Basil
Once the ragu has thickened, stir in chopped fresh basil and remove from heat.
Bake the Eggs
- 5
Preheat the Oven
Preheat your oven to 180°C (350°F).
- 6
Assemble the Dish
In a baking dish, spread the ragu evenly at the bottom. Make four small wells in the ragu and crack an egg into each well.
- 7
Add Cheese and Bake
Sprinkle grated Parmesan cheese over the eggs and ragu. Place the baking dish in the oven and bake for 15-20 minutes, or until the egg whites are set but the yolks are still runny.
- 8
Garnish and Serve
Remove from the oven, sprinkle with chopped parsley, and serve immediately.
