1. Prepare the Mussels

Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

2. Cook the Sausage and Fennel

In a large pot, heat olive oil over medium heat. Add the nduja sausage and cook for about 2-3 minutes until it starts to render its fat. Add the diced fennel and minced garlic, cooking until the fennel is soft, about 5 minutes.

3. Add Tomatoes and Wine

Stir in the crushed tomatoes and white wine. Bring to a simmer and let cook for about 10 minutes, allowing the flavors to meld. Season with salt, black pepper, and red pepper flakes to taste.

4. Cook the Mussels

Add the cleaned mussels to the pot, cover, and steam for about 5-7 minutes, or until the mussels open up. Discard any mussels that do not open.

5. Garnish and Serve
