Remove the ribeye steaks from the refrigerator and let them come to room temperature for about 30 minutes before cooking. This ensures even cooking.

Generously season both sides of the steaks with black pepper and salt. Press the seasoning into the meat to adhere.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks to the skillet. Sear for about 4-5 minutes on each side for medium-rare doneness.
