Prepare the Broth

In a saucepan, heat the vegetable broth over low heat and keep it warm throughout the cooking process.

Sauté the Aromatics

In a large skillet or saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

Cook the Mushrooms

Add the mixed wild mushrooms to the skillet and sauté for about 5-7 minutes, until they are tender and any moisture has evaporated. Season with salt and pepper.

Toast the Rice

Add the Arborio rice to the skillet, stirring to coat it with the oil and butter. Cook for about 2 minutes until the rice is slightly translucent.

Add Broth Gradually

Pour in one ladle of warm vegetable broth into the rice mixture. Stir continuously until the liquid is mostly absorbed. Repeat this process, adding broth one ladle at a time, stirring regularly, until the rice is creamy and al dente. This should take about 18-20 minutes.

Finish the Risotto

Once the rice is cooked, remove the skillet from heat. Stir in the remaining tablespoon of butter and the grated Parmesan cheese. Adjust seasoning with salt and black pepper to taste.
