Miso Citrus Glaze

Preparation

Preparing the Miso Citrus Glaze

1. Mix glaze ingredients

In a small bowl, whisk together 2 tablespoons of white miso paste, 1 tablespoon of soy sauce, 2 tablespoons of fresh orange juice, 1 tablespoon of fresh lemon juice, 1 teaspoon of grated ginger, 1 teaspoon of honey, and 1 clove of garlic (minced) until smooth and well combined.

2. Simmer the glaze

Pour the mixture into a small saucepan and bring it to a gentle simmer over medium heat. Stir frequently and cook for about 3–5 minutes, or until slightly thickened. Remove from heat and set aside.

Cooking the Salmon

3. Prep the salmon

Pat 4 salmon fillets dry with paper towels. Season both sides lightly with salt and pepper.

4. Sear the salmon

Heat 1 tablespoon of vegetable oil in a large non-stick or cast-iron skillet over medium-high heat. Once the oil is hot and shimmering, place the salmon fillets skin-side down in the skillet. Cook without moving for 4–5 minutes, or until the skin is crisp and golden brown.

5. Finish cooking

Gently flip the salmon fillets and cook for another 2–3 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove from heat.

Plating and Serving

6. Glaze and serve

Transfer the salmon to serving plates. Spoon the warm miso citrus glaze over the top of each fillet. Garnish with chopped green onions or sesame seeds if desired. Serve with steamed rice or sautéed vegetables for a complete meal.
