Prepare the Stuffing

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion and celery, and sauté until softened, about 5 minutes. Stir in the diced apples, dried cranberries, walnuts, sage, thyme, salt, and pepper. Cook for another 5 minutes until the apples begin to soften. Remove from heat and add the bread crumbs and brandy, mixing well to combine. Let the stuffing cool slightly.

Prepare the Pork Loin

Preheat your oven to 375°F (190°C). With a sharp knife, carefully cut a pocket into the pork loin, being sure not to cut all the way through. Season the outside of the pork loin with salt and pepper.

Stuff the Pork

Fill the pocket of the pork loin with the apple stuffing mixture, pressing gently to fit it all in. Use kitchen twine to tie the pork loin to help hold the stuffing inside.

Sear and Roast

In the same skillet used for the stuffing, melt the remaining 2 tablespoons of butter over medium-high heat. Sear the stuffed pork loin on all sides until golden brown, about 4-5 minutes per side. Transfer the pork loin to a roasting pan.

Bake

Roast in the preheated oven for about 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C). Let the pork rest for 10 minutes before slicing.

Serve

Slice the loin and serve with any remaining stuffing on the side.
