Prepare the Chicken
Preheat the oven to 375°F (190°C). In a bowl, mix olive oil, salt, black pepper, and chopped sage leaves. Rub this mixture all over the chicken breasts.
Roast the Chicken
Place the seasoned chicken breasts on a baking sheet and roast in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
Make the Boredelaise Sauce
While the chicken is roasting, heat a saucepan over medium heat. Add chopped shallots and sauté until translucent, about 3-4 minutes.
Add Wine and Reduce
Pour in the red wine and bring to a simmer. Cook until the wine is reduced by half, about 10 minutes.
Serve
Plate the roasted chicken breasts and drizzle the herb-infused Boredelaise sauce on top. Garnish with additional sage if desired.
