Preparation
Cook the Grains
In a medium saucepan, combine quinoa, farro, barley, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until grains are tender and liquid is absorbed. Remove from heat and let cool.
Prepare the Vegetables
While the grains are cooking, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces. Finely chop the fresh herbs.
Mix the Salad
In a large bowl, combine the cooked grains, chopped vegetables, and fresh herbs. Toss gently to combine.
Make the Dressing
In a small bowl, whisk together sweet chili sauce, ranch dressing, and a pinch of salt to taste.
Combine and Serve
Drizzle the sweet chili ranch dressing over the salad, toss gently to coat, and serve immediately.
