Prepare the Chicken
Rub the chicken breasts with Cajun seasoning, salt, and pepper on both sides.

Cook the Chicken
In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side until they are blackened and cooked through. Remove from skillet and let them rest.

Cook the Pasta
In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente. Drain and set aside.

Make the Cajun Cream Sauce
In the same skillet, add minced garlic and sauté for about 1 minute. Then pour in the heavy cream and bring to a simmer. Stir continuously for about 2-3 minutes until the sauce thickens. Adjust seasoning with salt and pepper.

Combine and Serve
Add the cooked rotini to the skillet with the Cajun cream sauce and toss until well coated. Slice the blackened chicken and place it on top of the pasta. Garnish with chopped parsley and serve with parmesan cheese on the side.
