Prepare the Potatoes
Preheat the oven to 425°F (220°C). Wash and scrub the Russet potatoes thoroughly. Cut each potato into wedges and place them in a large mixing bowl.

Season the Wedges
Drizzle the olive oil over the potato wedges, then sprinkle with Cajun seasoning, salt, and black pepper. Toss the wedges until they are evenly coated.

Bake the Wedges
Spread the seasoned wedges in a single layer on a baking sheet. Bake in the preheated oven for 25-30 minutes or until golden and crispy, flipping halfway through.

Add the Cheese
Remove the wedges from the oven and sprinkle the cheddar, Monterey Jack, and Parmesan cheese over the top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Garnish and Serve
Once the cheese is melted, remove the wedges from the oven. Top with crumbled bacon, diced tomatoes, and a dollop of sour cream. Serve hot.
