Prepare the Ingredients
Rinse the catfish fillets under cold water and pat dry with paper towels. Slice the tomato and onion, and wash the lettuce leaves.

Blacken the Catfish
Coat each catfish fillet generously with blackening seasoning on both sides. Heat a skillet over medium-high heat and add a little oil. Once hot, add the catfish fillets and cook for 3-4 minutes on each side until blackened and cooked through.

Assemble the Sandwich
Toast the brioche buns lightly. Spread Creole tartar sauce on the bottom half of each bun. Place a lettuce leaf, followed by the blackened catfish fillet, sliced tomato, and onion. Top with Jamaican relish and close with the top half of the bun.

Serve immediately with your choice of sides like fries or a salad.
