Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic, mushrooms, bell peppers, and red onions. Sauté until they are soft and fragrant, about 5-7 minutes.
Add Spicy Black Beans
Stir in the spicy black beans and Creole seasoning. Cook for another 3-4 minutes until heated through. If you are adding protein (crawfish, chicken, or Angus chuck), add it now and cook until it is fully incorporated and heated.
Assemble the Burritos
Warm the flour tortillas in a dry skillet for 30 seconds on each side. Once warmed, lay a generous portion of the filling in the center of each tortilla. Sprinkle with pepper jack cheese.
Wrap and Serve
Fold in the sides of the tortilla and roll it up tightly from the bottom. Serve immediately, with your favorite salsa or guacamole on the side.
