Preparation

  1. 1

    Prepare the Vegetables

Wash and cut all vegetables into bite-sized pieces. Ensure that the broccoli is in small florets, the bell pepper is sliced, the carrot is julienned, the zucchini is sliced, and mushrooms are sliced.

  2. 2

    Make the Sauce

In a small bowl, mix together soy sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water until well combined. Set aside.

Cooking

  1. 3

    Stir-Fry the Vegetables

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of sesame oil. Once hot, add the broccoli, bell pepper, carrot, snap peas, zucchini, and mushrooms. Stir-fry for about 5-7 minutes or until the vegetables are tender-crisp.

  2. 4

    Add the Sauce

Pour the sauce over the stir-fried vegetables in the skillet. Stir well to coat all the vegetables with the sauce. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

Serving

  1. 5

    Garnish and Serve

Remove the stir-fry from heat. Sprinkle with sesame seeds and sliced green onions before serving. Serve hot over rice or noodles if desired.
