1. Prepare the Seafood

Rinse the shrimp, mussels, squid, and fish fillets under cold running water. Pat them dry with paper towels and set aside.

2. Prepare the Vegetables

Slice the mushrooms, halve the baby bok choy, and thinly slice the carrot. Chop the spring onions and set all vegetables aside.

In a large pot, combine the fish stock, coconut milk, lemongrass, ginger, garlic, chili peppers, soy sauce, lime juice, sugar, and salt. Stir well.

Cooking the Seafood and Vegetables
